1. The talk to the diabetes support group went well. It wasn't the diabetes group, in the end, it was the chronic diseases group, but "We're not called that anymore because it's too negative." Nobody knew what the group is called now, though. Still. It went well, I think? The messages boiled down to "Fish oil is a blood thinner. Those sections on A Current Affair and Today Tonight are actually paid advertisements. Get a Webster Pack; they're full of jelly beans." People seemed happy.
I pushed myself through an educational unit on managing diabetes (since I assumed I was talking to the diabetes group), which involved bracing myself for all kinds of fat-hate, body-shaming, doctor-monster bullshit. But it wasn't too bad, on the whole. The most pervasive thought I came away with was that maybe we should eat more oily fish in this household. Any favourite recipes people would care to share?
This is mine, for tuna patties, which we made yesterday for lunches this week. I've never written this recipe down before - we usually just throw whatever into the mix with the potatoes. But I'm trying to keep a record of things that we make, so that when we come back to them, I can remember what to do.
Ingredients (makes about 20 patties, two patties make a lunch sized serving with some salad or bread)
5 large potatoes suitable for mashing - I use sebago.
A bunch of spring onions, trimmed and chopped
A bunch of flat leaf parsley (sometimes we use coriander)
2 x 400g tins of tuna in spring water, drained and flaked
2 eggs, beaten
Frozen peas or corn
Grated carrot
(You can basically add anything you like, as long as the mixture clumps together. And if it doesn't, just add another egg.)
Breadcrumbs
Olive oil spray (though we didn't use it this time and it was all fine)
Paprika
Sweet chili sauce
Salt and pepper
Peel, dice and boil the potatoes in salted water until tender, then drain and mash. Add the chopped spring onions, other veggies, the sweet chili sauce, paprika, parsley. Stir in the tuna, and break up any large clumps. Don't add the eggs until the mix has cooled down to lukewarm, or they'll turn scrambled. Season with salt and pepper.
Pour the breadcrumbs onto a plate. Shape handfuls of the mixture into balls, roll in the breadcrumbs and arrange on an tray. Spray lightly with olive oil, and bake in the oven at 170C for about an hour.
These patties are baked in the oven, so the mixture is a bit wetter and gluier than they would be if I were shallow-frying them. If you want to fry them, you'd probably want to cut back on the potatoes or add some breadcrumbs into the mix.
Serve them with a salad with some more sweet chili sauce, or in a sandwich or whatever. They're nice hot or cold.
Give me tuna recipes! We need the oils of the fish.
2. Missy, our elderly cat, started looking poorly on Saturday: fussing with her mouth, off her food and all her fur standing up.
lilacsigil took her to the vet yesterday, and she has gingivitis again, with some nasty ulcers at the front of her mouth. (Gingivitis is a complication of her kidney disease.) She's had a shot of antibiotics and a steroid to help with the inflammation, and overnight she's doing a lot better. She lost 200g (relevant when you're a tiny kitty), and the vet suggested that she might have started losing weight last week before she started showing symptoms, so we're going to weigh her weekly. It might give us a chance to get her to the vet earlier, before she loses condition. It's nice to see her perkier and enjoying her dinner so fast though. And now that I think about it, to have only lost 200g at the end of winter is actually a pretty good outcome. We can plump her up again through this summer.
3. Operation Walk the Cat proceeds apace.

He really enjoys the walks, but rather than burning off energy, he has the idea at the moment that we'll let him outside at any moment. He gets really excited whenever
lilacsigil goes near the place where his harness is kept. I'm hoping he settles down. I don't think I can handle him strutting around the house bellowing at full volume. For hours.
4. The Great British Bake-Off! Buns!
Howard's hemp loaf gave away all his secrets - he's one of those happy, older stoners, isn't he? He's totally mellow. Toasted, even. I picture him living like Radagast the Brown.
I can't handle how much Sue Perkins and Kimberly are flirting. It's all gentle touches on the shoulder or clutching each other and dissolving into giggles, or intense secret conversations about the other competitors. I think they should move in together, and raise Ruby as their baking baby sister. Ruby is a darling, but a bit of a ninny.
5. Sleepy Hollow was awesome! This show isn't perfect, but at the same time, it just gallops on and on without looking back, and I have a certain amount of respect for that kind of story telling.
- Post-it notes! Donut tax! Single shot weapons! I love every little scrumptious detail about Ichabod adapting to the modern world.
- That horrible, hilarious scene (with John Cho, looking at his reflection upside down and backwards. I'm so glad he's back, and there's such a sadness and inevitability to Andy Dunn. I hope we get to see more of him.
- Abbie gets a guardian spirit, too, and she demands that he does stuff. I adore her. I adore her mentor relationship with Sheriff Corbin. More! More!
- Jenny! My body is ready for your Sarah Connor stylings. Actually, I'm ready for all the sisterly team-ups in this story. I want them to work together; I've seen more than one Winchester comparison floating around, and I'm all up for that.
Some icon bases from 1.02. No special effects - just crops and adjustment. Isn't it interesting when you start making icons for a new show? I remember that Supernatural was always saturated with blue. The lighting for Sleepy Hollow is very, very green.

the Libyan alternative to Tuna Salad
Date: 2013-09-25 03:07 pm (UTC)Her family usually makes a ton of these sandwiches, packs them in a cooler, and then eats them at the beach.
Tuna and Harissa Sandwiches
Filling (may be scaled upward for multiple cans of tuna):
1 can tuna (preferably canned in olive oil, otherwise add a dash of olive oil)
~1 tbsp harissa, or hot sauce to taste
juice of 1-2 lemons
Optional Condiments:
Pitted olives
Other ingredients:
Bread (preferably a really nice fresh baguette or a panini or something with a crunch crust)
Recipe:
Open can of tuna, add hot sauce and lemon juice to taste. Also add some olive oil if the tuna was not canned in olive oil. Mix. Slice bread, spread tuna on bread along with a couple of pitted olives if desired.

Date: 2013-09-25 07:25 pm (UTC)I have two tuna recipes for you. Well, one is for salmon croquettes, which are more tuna than salmon.
Salmon Croquettes
1 can salmon (or bag)
1 large can tuna (or two small cans, or two bags)
1 medium yellow onion, finely chopped
Juice of 1/2 a lemon (I actually use the juice of the whole lemon)
1/2 cup worcestershire sauce
Breadcrumbs or cracker crumbs
Salt and cracked black pepper to taste
Combine all ingredients in a large bowl, modify to taste (I tend to add more lemon as indicated and more worcestershire. Sometimes I add red pepper flakes). Add enough breadcrumbs to make ingredients stick together when making small patties. Pan fry until golden brown.
I love these things, and they are delicious cold the next day.
Tuna salad crescent rolls
Make your favorite tuna salad. Spoon it into Pillsbury crescent rolls. Bake!

Date: 2013-09-25 11:39 pm (UTC)Once a week we have salmon fillets. L usually cuts chicken breast-sized pieces, and puts each in a foil packet. Depending on what flavors you like, they are good doused in lemon juice, with lots of different spices, or just with a little butter. Cook on broil until pinky white -- longer if you dont like anything close to raw fish.
